Back to School Banana Walnut Muffins (and sister pics)

I wanted to share a yummy and easy recipe for those of you who have kiddos heading back to school on Monday. I have made the muffins the past two weeks, and everyone in the house is a fan! Add a glass of milk and maybe some eggs or some fruit and you have a delicious breakfast!

1/2 c. softened butter
1 c. sugar (I used a little less)
1 tsp. vanilla
3 to 4 ripened bananas
3/4 c. flour
3/4 c. whole wheat flour
1/2 tsp. salt
3/4 tsp. baking soda
1/2 tsp. nutmeg
1 1/2 tsp. cinnamon
2 eggs
1 c. walnuts or pecans
Blend first 4 ingredients. Add remaining and mix until blended. Fill paper muffin cups with batter and bake 20 to 25 minutes at 350 degrees. I made half without nuts and then just added a half cup of nuts for the second half of the batch. It makes exactly 2 dozen muffins. I think next time I will add in some milled flax seed and maybe try to up the whole wheat flour. Hope you enjoy!

Elaine 14 Months (+ a few days)

Poor Elaine, all chaos ensued, and we forgot to celebrate 14 months... Hopefully that won't be brought up in counseling later in life! At any rate, our little spitfire is in fact 14 months old and loves to GO GO GO! This has resulted in a great deal of "sissy bugging" but also a lot of tickling, wrestling, hiding, and laughing between the two girls- LOVE IT!
Elaine's receptive language and memory is outstanding. I can tell Elizabeth, "It's time to go. Please get your shoes on," and the next thing I know, Elaine has searched out and found her shoes, and is standing by my side holding them (most often her snazzy silver sparkly sandals), waiting for me to help her put them on. As we are leaving the house, Elaine will often walk to the back door first to tell Kyleigh, "Bye Bye!" She is also great at expressing what she wants. For example, the other day she wanted apple sauce, so she took a spoon out of the dishwasher, walked over to the refrigerator, and said "EAT!" I opened the fridge and gave her the option of yogurt or apple sauce, she took the apple sauce, and snack was had! (It's not always this easy though!) As far as her verbal skills, some days she is a rock star, and others, she chooses to grunt and point to express her wishes. Not that everyone would understand what she is saying, but she has added eat, drink, sissy, bath, yes, book, ball, and cheese to her vocabulary.
As far as her class at church, I think the worst is behind us. She still is not a huge fan of the City Zoo, but she isn't screaming the whole time either... we're getting there!

Some Favorites:
-Brushing her teeth! If anyone else is brushing theirs, Elaine must have a tooth brush with water on it in hand!
- Washing her hands! Especially at inopportune times in public restrooms.
- Peanut Butter!!! This is how we are working out of that 14th percentile:) The girl will eat spoonful after spoonful. I know... most docs aren't cool with this, but good ol' Dr. Scroggie says to just make sure she isn't getting so much she could choke.
- Juice boxes and capri suns! We didn't know Lainie could drink out of a straw until she stole Elizabeth's capri sun at a birthday party and emptied it in no time! Since then, if she sees one, she must have one:)
- Daddy! This girl loves Justin soooo much! She loves to snuggle, to be tickled, and just to be close to him... melt this mommy's heart!
- Climbing! Be it the couch, the bed, or wherever everyone else is, Elaine wants to be there too and will do whatever it takes to get there!

A trip to Sprouts always ends with "a special snack" from the bulk bins. Elizabeth's favorite is white pretzels (yogurt covered). Elaine now gets excited about special snack, and she wanted a white pretzel for the ride home. When we arrived home and I opened the back door, this is what I found! A VERY HAPPY LITTLE GIRL!

The Word Is Out!

So, today I got tired of speaking about life via twitter and facebook without saying what is really up... Therefore, here is what I posted
The baby in my belly requested homemade mashed potatoes with dinner. Therefore, I must oblige, right?
Yup, it's true! Rumor has it that we make pretty babies, so we decided to go for number 3. I will be 10 weeks tomorrow which makes me due around the end of February. I will have a sonogram on Monday, so maybe a little pic of our little bean will be posted in the near future.

Catching Up!

You know those times in your life when things are just absolutely crazy? Those times when you get so behind on housework, laundry, blogging, having good Jesus time, etc., that you don't even know where to begin catching up? Welcome to the end of June and our July! Our calendar was full of very fun things, and we had a blast, but in the end I was exhausted!!!! We are blessed with incredible parents who treated us to much needed vacations, one to the lake with the Bassetts where we were able to relax a little among wedding planning, and one to Vail, Colorado with the Harris fam which was the girls' first plane ride. Oh, and how can I forget Jenn's bachelorette party and bridal portraits and other wedding fun. There was also an incredible week of CityView's inaugural Sports Camp followed by Justin preaching. And, in the midst of it all, my beautiful girls have been growing up and providing me with plenty of blogging material! You may think that now is the time to rest and relax... WRONG! Jennifer and Brandon get married THIS SATURDAY! It is for this reason that I have to catch up on the past month before there is even more that piles up! It is my goal to blog a little each day this week to catch up! Stay tuned for the updates.
